Chicken Salad

I feel like the weather determines my mood more often than it should. At least I've got the perfect turn around when the weather's got me down. I checked the weather yesterday and happened to see that the next few weeks will be in the high 50's in my neck of the woods. 


Its February 1, people. Either this weather is too good to be true or I will be living out all of my summer dreams soon. I'm not holding my breath though. BUT all of this warm weather has me, obviously, craving summer. What better way to bring summer into a not-so-summer time of year than with a quick, delicious chicken salad sandwich. *wiping up my own drool* 


To be honest though, sometimes I skip the bread all together and eat this as a dip with crackers. Or just right off the spoon. That works too. 


I always, and when I say always, I mean ALWAYS have cooked, shredded chicken in my freezer. Having a stash of frozen shredded, sliced & diced chicken in my freezer is such a game changer! My favorite way to prep this easily & quickly is in my Instant Pot. For this recipe you will start with cooked, shredded chicken.

 Add in halved grapes, celery, diced apple & slivered almonds. To be honest, the almonds are my favorite part. The grapes are a close second. 


Give it a quick stir.


 Then add in mayo and seasonings. Combine & eat!



Ingredients:
2 C chicken, cooked & shredded
1 C grapes, halved
1 C apples, pealed & diced
1/2 C celery, diced
1/4 C almonds, slivered
1/2 C mayo (heaping!)
2 1/2 tsp dried chopped onion
1 tsp salt
1/4 tsp pepper


1. Combine all ingredients & enjoy!
