Sweet Salsa Chicken

What is worse than a sick child? Three sick children and a sick dad AND a sick mom. Wahhh. Pink eye, ear infections and colds have taken over my house. Which means, laziness is at its (deserved) maximum. We have spent the past few days, putting together puzzles, playing card games, taking naps & listening to The Greatest Showman soundtrack. Side note: best movie ever? Yes. 


ANYWAY, as you could probably guess, I had about .00532 ounces of energy when it came time to feed my little fam. I knew I needed something quick, something easy and most of all something that I didn't need to run to the store for. I looked in my fridge & pantry and threw together something AMAZING.



 Like, this is definitely going into our dinner rotations. So easy, and so good! This chicken is so versatile, I made them into quesadillas but it would be delicious on nachos, in a burrito with rice & beans, on a salad.. the possibilities are endless.



 I started out by cooking a chicken breast on high pressure with Dr. Pepper as my liquid. I used Dr. Pepper because thats what I had, any cola would work though. This gives the chicken a sweet attribute to begin with. 



After it cooked I took the chicken out and covered it with foil. I aloud it to rest while I threw the sauce together. 



I discarded the leftover liquid in the Instant Pot and then combined salsa, Dr. Pepper and brown sugar in the instant pot. I used the saute function on low to help dissolve the brown sugar. I then shredded my chicken and then added it to the sauce. 



Voila! Eat and enjoy!

Ingredients 
1 Can of Dr Pepper or another cola, divided
1 Chicken breast
1/2 C Salsa, mild
1/4 C Brown Sugar

1. Add the chicken breast and 1 cup of soda pop to the Instant Pot. I like to cut my chicken breast into strips before hand so it will cook more evenly & faster.  Cook on manual High Pressure for 8 minutes. Allow for 5 minute NPR. Remove chicken and cover with foil while you make the sauce.
2. Discard liquid in Instant Pot. Combine 1/4 C soda pop, salsa and brown sugar in Instant Pot. Turn on the Saute function on Low and simmer until the brown sugar has completely dissolved. 
3. Shred the chicken and add to sauce. It is now ready to eat! Enjoy
